Flax, Yogurt, and Fruit Bowl

Flax, Yogurt, and Fruit Bowl – use banana, apple or berries.

  • 1 C low-fat or non-fat plain yogurt
  • 1 Tbs flax seeds
  • ½ C fresh sliced fruit, such as banana, apple or berries.

Combine the flax seed with the yogurt and pour over fruit.

Yogurt Parfait with oatmeal, fruit, nuts and flax.

  • ¾ C plain yogurt (2% or 3% works best)
  • ¼ C oatmeal (quick oats or rolled, large-flake oats)
  • 1 C fresh or frozen berries or fruit
  • 2 Tbs ground or sliced nuts (to taste)
  • Honey or sweetener, to taste
  • ½ Tbs ground flax seed

In a reusable container with a lid, layer half of: the yogurt, oatmeal, fruit, nuts, flax and sweetener.  Repeat layers, ending with a sprinkling of flax seed.  Let sit at least 10 minutes, or overnight.

Breakfast Pudding with flax seed meal

  • 1/4 C flax seed meal
  • 1/4 C water
  • 1 egg
  • Sugar or substitute to taste
  • Additions as desired (see below)

Mix flax meal, egg, and water in a microwave-safe bowl. Microwave on high for 45 seconds.  Add desired additions and microwave for about 45 more seconds.  Stir and eat.

 

Possible Additions:

  • Fresh or frozen berries or other fruit
  • Peanut butter or other nut butters
  • Maple or other syrup
  • Jam or preserves
  • Chopped nuts

Flax Meal Peanut Butter Hot Cereal

  • 1/4 C flax seed meal
  • 1/2 C boiling water
  • 2 Tbs peanut butter
  • 1/4 tsp cinnamon

Pour boiling water over flax seed meal and stir well.

Stir in peanut butter and cinnamon and then let sit for 2 minutes to thicken.

Avacado Smoothie with pumpkin seeds

  • 1/2 ripe avocado, pitted and peeled
  • 1/2 C silken tofu
  • 1 1/2 C vanilla or plain soy milk
  • 2 Tbs pumpkin seeds, plus extra for garnish
  • 1 tsp vanilla extract
  • Sweetener, to taste

Combine avocado, tofu, rice milk, pumpkin seeds, vanilla, and sweetener in a blender and purée until very smooth.  Pour into glasses and sprinkle with additional pumpkin seeds.

Peach Tofu Dream with apple and lime juice

  • 3/4 C peach sorbet
  • 3/4 C apple juice
  • 4 oz. tofu
  • Juice of ½ lime
  • 1 1/2 C peeled and diced fresh or frozen peaches
  • 1 C diced fresh or canned pineapple

Combine the sorbet, apple juice, tofu, and lime juice in a blender. Add the peaches and pineapple. Blend until smooth.

  • 1 (12 oz) package firm silken tofu
  • 1 C fat free soy milk
  • 1 banana
  • 1 C raspberries
  • 1/4 C frozen orange juice concentrate

Combine all ingredients in a high speed blender and blend until smooth.

  • 1 C coffee, cold
  • 1 scoop protein powder, vanilla or chocolate
  • 1/2 C coconut milk
  • 2 Tbs Flax Seed Meal
  • Sweetener to taste
  • 3-4 ice cubes

Combine all ingredients in a high speed blender and blend until smooth.

  • 2 Tbs of raw honey
  • 1 C of fresh or frozen blueberries
  • 1 tsp vanilla extract

Combine all ingredients in a high-speed blender and blend until smooth.
