Walnut Crusted Tilapia

Walnut Crusted Tilapia with curry powder and fresh parsley.

  • 1 C toasted walnut halves
  • Salt and pepper to taste
  • 1 tsp curry powder
  • 6 (5 oz) tilapia fillets
  • 3 Tbs canola oil
  • 2 Tbs minced fresh parsley

Combine walnuts, salt, pepper, and curry in a food processor and pulse until finely chopped. Transfer to a wide shallow dish. Coat tilapia fillets with nut mixture, turning to coat both sides.

Heat oil in a large skillet over medium heat. In batches, place fillets in skillet and cook, covered, for 3 to 4 minutes. Carefully turn with a spatula and cook, covered, for 3 to 4 more minutes or until fish is cooked through and just flakes when pressed with the back of a fork.
